This hard cheese takes 6 months to mature fully. It has a pale-yellow colour with crumbly texture.
It gets characteristic flavour because of the breed of sheep – the small, scruffy Churra and the Castilian sheep.
This sweet, nutty and salty cheese is served as a table cheese, going perfectly with a glass of red or white wine.
