We are Toby Simmonds and Jenny-Rose Clarke, together we are Toons Bridge Dairy and The Real Olive Company. 

Toons Bridge Dairy makes cheese and farms buffalo in West Cork. 

The Real Olive Company imports, makes, retails and wholesales the finest Mediterranean foods. We established ourselves in Cork's English Market in 1993 and travelled the length and breadth of Ireland's food markets selling our wares.

Toby had the bright idea in 2009 to import water buffalo and make Ireland's first buffalo mozzarella, and we now make over 15  cheeses in the old creamery building in the village of Toonsbridge.
