Toons Bridge Pizza

In Toons Bridge at the weekend, as well as our shop we serve Neapolitan pizzas from our wood fired oven. We make traditional long fermentation "biga" dough that is light, airy and highly digestible, with toppings from our dairy and market stalls. Our classic is of course margherita with the freshest mozzarella on a tomato base. With buffalo mozzarella, we uniquely in Ireland, place torn pieces on to the cooked tomato base.
