• This hard cheese takes roughly 12 months to mature fully. It has a pale-yellow colour with crumbly texture. It has a stronger tastes and firmer texture compared to the younger Zamora.
  

• This nutty and salty cheese is served as a table cheese going perfectly with a glass of red or white wine.
