N'duja

Soft Calabrian spreadable salami flavoured with spectacular quantities of local hot red peppers.

 This is made by a small butcher, Camillo Palmieri  who also raises native Calabrian pigs in a semi feral state. Similar to sobrasada from Mallorca it is great served with slices of bread or cheese.

 It is often used in pasta sauces, toasted sandwiches and perfect on pizza!
