The cheese has a distinctive flavour, creamy with a slight piquancy, and leaves an aftertaste that is characteristic of sheep's milk.
It has a firm and compact consistency and a buttery texture. It is perfect with crackers, a must on a cheeseboard or ideal to spice up a sandwich.
The semi cured manchego is slightly sweeter in taste than the cured making it a perfect cheese for lovers who enjoy a lighter younger cheese.
