Burrata and Straciatella are connected as the filling of burrata is the straciatella. We make sheets of mozzarella and tear them into shreds and mix with the best of West Cork cream. This is straciatella. We then make more mozzarella, and make little pouches that we fill with the straciatella and seal with a hard squeeze and a cord. This is considered the most luxurious cheese of the Italian dairy, and is usually simply consumed with a simple accompaniment of in season tomatoes or high quality cured prosciutto.
